Cupping Notes: Honey sweetness, tropical fruits, hints of cherry & caramel

Process: 168-hour fermentation and honey drying
Farm Name: Los Cedros
Town: Ebejico, Antioquia
Altitude: 1.900 – 2.100
Variety: Castillo – Colombia

The coffee is processed in muscilage,  giving them a honey-like texture and color. This eco-friendly method uses less water than traditional washed processing, making it a great choice for environmentally conscious coffee lovers. The lactic honey fermentation creates a balance of tropical fruit and honey sweetness, offering a rich, layered flavor with a smooth, creamy finish.

After 168 hours of careful fermentation—96 hours in cherry and 72 in mucilage—the beans develop rich, complex flavors, shaped by the farm’s unique microclimates and altitudes. At Finca Los Cedros, tradition and innovation combine to craft truly distinctive coffees.

Dedicated to preserving Colombia’s coffee legacy while pushing it forward, Juan David is transforming Finca Los Cedros into a hub of creativity. His efforts ensure that Colombian coffee continues to shine as a symbol of excellence for generations to come, bridging the gap between tradition and progress.

Alongside him is Octavio, a skilled Q-grader, ensuring that each batch meets the highest quality standards. Having a Q-grader directly working on the farm team is a unique and rare occurrence making this product that much more special. Overseeing the harvest is Don Monch, Juan David’s right-hand man. He ensures only the ripest cherries are picked and manages fair pay for the coffee collectors.

Courage and Perseverance in the Coffee Industry

For years, the average age of farmers in Colombia’s coffee industry has been over 50, with many nearing retirement. As this aging community steps back, a critical challenge arises: a lack of younger talent to step in and carry the torch. A new generation of leaders is struggling to emerge.

Juan David Builes is determined to take a step in the right direction. Raised on a cattle farm, he gained firsthand knowledge of farming before acquiring Finca Los Cedros. Juan David blends Colombia’s rich coffee traditions with modern innovations, forging a path toward the future.

Special Farming Practices

Finca Los Cedros, nestled in Antioquia’s lush mountains, is a haven where nature and innovation create exceptional coffee. Peacocks roam freely, fog drifts over the coffee trees, and fruit and plantain trees thrive, enriching the ecosystem.

On the steep slopes, handpicked ripe cherries are collected using a “funnel” system, ensuring workers are able to deliver their cherries with ease. The farm’s Yellow Honey coffee is a standout, processed with the eco-friendly honey method that leaves sweet mucilage on the beans, enhancing natural sweetness while conserving water.
